Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish and soak up the sauce as they cook.
Flour
Thickens the milk or cream into a smooth, rich sauce.
Butter (in the method)
Adds fat for richness and a fuller flavor to the sauce.
Milk or cream (in the method)
Provides the liquid that becomes the sauce; cream adds more richness.

The step that matters

Cover and cook until a rich sauce is formed. Flour needs enough gentle heat and time to thicken the liquid fully; too little cooking leaves the sauce thin and floury tasting, while too much heat can scorch the milk on the bottom.

Swap the potato

How well each one fits the dish's main ingredients (flour, chocolate, pepper):

  1. Capsicumfits better
  2. Arrowrootfits better
  3. Spinachfits better
  4. Potatothe original

Fit is the average pairing score against flour, chocolate, pepper. Candidates are from the same food group and used in at least 100 recipes.
