Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the filling as it boils, giving it a sliceable, custard-like body.
Eggs
Yolks enrich and set the filling; whites whip into the meringue topping for lift and structure.
Lemons
Juice and grated rind supply the sharp, aromatic citrus flavour of the filling.
Sugar
Sweetens the filling and helps stabilise the whipped egg whites in the meringue.

The step that matters

Beating the meringue to a stiff froth. Whites must be whipped until they hold stiff peaks, since well-whipped foam gives the topping its height and structure. Under-whipped whites will weep or flatten in the oven.
