Corn Pudding Without Eg-g-s
Ingredients
Directions
Prepare the corn
Split the grains of twelve ears of corn with a knife and scrape the pulp out.
Mix and bake
Pour in one quart of sweet milk, add a piece of butter the size of an egg, and also salt and pepper to taste.
If the corn used is not the sweet garden corn, the pudding is improved by adding a little sugar.
Bake one hour.

What each ingredient does
- Corn
- Forms the bulk of the pudding and supplies its sweet, starchy flavor.
- Sweet milk
- Forms the liquid base that thickens around the corn into a soft, custardy texture.
- Butter
- Adds fat for richness and a smoother mouthfeel.
