Salsify, or Vegetable Oyster, Stewed

Ingredients

Directions

Prepare and cook

  1. Scrape the roots and drop them into cold water as soon as cleaned, to prevent darkening.

  2. Cut the roots into inch pieces; put them into a stew-pan with enough boiling water to cover them and cook until tender.

Finish the stew

  1. Drain off nearly all the water and add a cup of rich milk or cream.

  2. Stew for a few minutes, rub a teaspoonful of flour in a lump of butter, stir it in, and season with salt and pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify roots (in the method)
Provide the main body of the stew, becoming tender when simmered in water.
Rich milk
Adds richness and creamy moisture to the stew as it simmers.
Flour
Thickens the liquid as it cooks, giving the stew body.
Butter
Carries the flour smoothly into the stew and adds richness.

The step that matters

Drop the roots into cold water right after scraping. Salsify discolours quickly when its flesh is exposed to air. Cold water slows this darkening, keeping the roots pale and the stew looking appealing.
