Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling and whites whip into a stiff, stable meringue topping.
Butter
Adds richness and tenderness to the filling.
Lemons
Rind and juice supply the bright, sharp acidity that defines the pie.
Sugar
Sweetens the filling and helps stabilize the meringue.

The step that matters

Beating the meringue to a stiff froth. Whites must be beaten until stiff and sugar fully dissolved so the topping holds its peaks and does not weep or collapse during browning. Underbeaten or greasy whites will fail to hold shape.
