Lemon Pie

two pies

Ingredients

Directions

Make the filling

  1. Squeeze the juice of both lemons and grate the rind of one.

  2. Stir together the yolks of three eggs and the white of one egg with the sugar, melted butter, and lemon.

  3. Beat well, then add one coffee-cup of sweet cream and beat for two or three minutes. This will make two pies.

Bake and top

  1. Bake until the crust is done.

  2. Beat the remaining whites of the eggs with four tablespoons of sugar.

  3. Spread on the pie, and return quickly to the oven before the topping is set, which will cause the pie to fall when taken from the oven.

What each ingredient does

Eggs
Yolks and whites thicken the filling and set the custard structure.
Sugar
Sweetens the filling and helps stabilise the beaten egg white topping.
Lemons
Juice and rind supply the sharp, aromatic flavour of the filling.
Sweet cream
Adds richness and moisture to the filling.
Melted butter
Adds fat for richness and a smooth, tender texture.

The step that matters

Returning the pie to the oven quickly after spreading the topping. If the beaten egg white topping sets before baking, it can deflate and cause the pie to fall when removed from the oven.
