What each ingredient does

Cucumbers
Forms the main body of the pickle and gives it a crisp bite.
Onions
Adds savory flavor and aroma that mellows during the pickling.
Green peppers
Contributes fresh, slightly grassy flavor and crunch.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Vinegar
Provides acidity that flavors the pickle and helps preserve it.

The step that matters

Soaking in salt water, then draining. Salt draws water out of the vegetables through osmosis, which firms their texture. Draining fully keeps excess brine from diluting the vinegar and seasoning.
