Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Flour
Provides the structure that holds the cake together once baked.
Eggs
Add structure and lift when whites are beaten, and richness from the yolks.
Sugar
Sweetens the cake and helps the butter hold air when creamed.
Almonds
Add moisture, richness and nutty flavour to the batter.

The step that matters

Folding in the flour. Adding flour too vigorously develops gluten and makes the cake tough. Mixing it in gently keeps the crumb light and tender, which matters because the beaten whites and creamed butter hold the air that gives lift.

Swap the lemon
