Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken as they gently cook, giving the parfait its custard-like body.
Whipped cream
Adds air and lightness, giving the chilled parfait a soft, creamy texture.
Sugar
Sweetens the custard and balances the bitterness of the coffee.
Black coffee
Provides the main flavour of the parfait.

The step that matters

Stir over a slow fire until thick like custard. Egg yolk proteins set when heated, so high heat or long stirring can curdle or scramble the custard. Gentle, steady heat gives a smooth, thick base.
