Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the lemon filling as it bakes, giving it a set, custard-like structure.
Lemons
Juice and rind provide the sharp acidity and bright aroma that define the filling.
Sugar
Sweetens the tart filling and helps stabilise the whipped egg whites.
Cornstarch
Thickens the filling so it holds a sliceable texture after baking.

The step that matters

Browning the egg whites. The whites are set back in the oven for only about one minute. Egg white foam can overbrown quickly or weaken and weep if held too long, so watch it closely.
