Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes (in the method)
Form the body of the dish, softening as they stew in the sauce.
Butter and flour
Form a roux that thickens the milk into a smooth, creamy sauce.
Milk
Forms the liquid base of the sauce, adding richness and creaminess.

The step that matters

Beat the flour mixture into the milk until smooth. Flour lumps form if it is added to liquid unevenly. Kneading it with butter first and beating it into hot milk helps the starch disperse and thicken the sauce smoothly.
