Corn Meal Griddles

Ingredients

Directions

Make the batter

  1. Pour boiling water slowly upon this mixture, stirring until all is moistened, then leave it to swell for half an hour.

  2. When cool enough, break into it three unbeaten eggs, adding two tablespoonfuls of cold milk.

  3. Beat these well into the dough.

  4. Test the batter on the griddle, and add a little cold milk from time to time until the batter is the right thickness to bake and turn conveniently.

Bake and serve

  1. Bake both sides a nice brown.

  2. Serve hot, and well buttered.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure and richness to the griddles.
Cornmeal (in the method)
Forms the body of the griddles, giving them their grainy texture and flavour.
Cold milk
Thins the batter to the right consistency for baking on the griddle.

The step that matters

Testing the batter on the griddle. Cold milk is added a little at a time until the batter reaches the right thickness. Too thick and the griddle cakes will not spread or turn well; too thin and they will not hold their shape.
