What each ingredient does

Molasses
Adds deep sweetness, dark flavor, and moisture that keeps the taffy chewy.
Sugar (in the method)
Provides sweetness and, as it boils, sets into a firm, brittle candy structure.
Vinegar (in the method)
Adds acidity that keeps sugar crystals small, giving a smoother, less grainy texture.
Butter
Adds fat for a richer flavor and a tender bite that eases sticking.
Soda
Reacts with the acid to release gas, lightening the candy and making it crisp.
Peanuts
Add nutty flavor and crunch that contrasts with the chewy candy.

The step that matters

Boil until brittle in water. Sugar candy sets according to its final temperature. Stopping too early leaves the taffy sticky and soft, while boiling too long makes it hard, dark, and bitter. A small test in cold water shows when it has reached the brittle stage.

Swap the peanut

How well each one fits the dish's main ingredients (molasses, butter, egg):

  1. Pecansfits better
  2. Almondfits better
  3. Walnutfits better
  4. Peanutthe original

Fit is the average pairing score against molasses, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
