Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Strong coffee
- Provides the main coffee flavour and aroma.
- Sugar
- Adds sweetness and balances the bitterness of the coffee.
- Cream
- Adds richness and a smooth, soft texture.
- Gelatine
- Sets the liquid so the cream holds its shape when turned out.
The step that matters
Dissolve the gelatine fully before adding the cream. Gelatine only sets properly when it is evenly dissolved. Undissolved granules leave specks and weak patches, so the mixture should be fully clear before the cold cream is stirred in and strained.
