Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the cream as they heat, giving the custard a smooth, set body.
Sugar
Sweetens the custard and balances the sharpness of the lemon juice.
Cream
Provides richness and fat, giving the custard a smooth, creamy texture.
Lemon
Juice adds acidity and sharp flavour, while the rind adds aromatic citrus oils.

The step that matters

Boil it up. Egg yolks can curdle or turn grainy if overheated, so the cream should be brought up to heat with steady stirring and then cooled gently to keep it smooth.
