Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes (in the method)
Form the main body of the pickle, softening into a tender, chutney-like texture.
Salt
Draws water out of the tomatoes, firming their texture and concentrating flavor.
Vinegar
Adds sharp acidity that balances the sweetness and keeps the pickle tangy.
Whole cloves
Contribute warm, aromatic spice to the pickle.
Celery seed
Adds a savory, aromatic note that complements the tomatoes.

The step that matters

Heat to a scald, not a boil. Heating only until the liquid scalds keeps the tomatoes intact. Prolonged boiling breaks down their structure, leaving the pickle mushy.

Swap the celery

How well each one fits the dish's main ingredients (clove, vinegar):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
