Ingredients

Directions

  1. Take half a peck of hard-shell clams, wash the shells clean, and put them in a kettle with about one teacup of water.

  2. Let steam until the shells open.

  3. When they open, take the clams out of the shells, strain the juice, and return it with the clams to the fire.

  4. After they come to a boil, add one pint of milk, a piece of butter the size of an egg, three crackers rolled fine, pepper, and salt to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams (in the method)
Provide the main body and sea-briny flavor of the stew.
Milk
Forms the creamy base of the broth and mellows its flavor.
Butter
Adds richness and fat that rounds out the broth.
Crackers
Rolled crackers soak up liquid and lightly thicken the broth.

The step that matters

Steaming the clams until the shells open. Clams cooked just until their shells open stay tender. Overcooking tightens their proteins, making them tough and rubbery.
