Noodle Soup

Ingredients

Directions

Prepare the noodles

  1. Mix two eggs with flour and a little salt.

  2. Roll the mixture into a thin crust like pie crust.

  3. Set the crust aside until slightly dried.

  4. When ready for soup, roll the crust up with your hands and cut into very thin slices from the end, so they resemble strings.

Cook the soup

  1. Heat water with milk, pepper, salt, and butter, or use chicken soup.

  2. Drop the noodle strings into the boiling liquid.

  3. Boil for about five minutes until done.

  4. Optionally add green corn boiled in milk.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the flour and set when cooked, giving the noodles their firm structure.
Flour (in the method)
Forms the gluten network that gives the dough its structure and chew.
Milk
Adds richness and softness to the broth.
Butter
Adds fat for richness and a smooth, rounded flavor.

The step that matters

Set the crust aside until slightly dried.. Partially dried dough is firm enough to roll up and cut into thin strings without tearing or clumping. Fully wet dough would stick together and lose its shape in the boiling liquid.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
