What each ingredient does

Eggs (in the method)
Yolks thicken the dressing and the beaten whites add lightness and body.
Whipped cream (in the method)
Adds richness and a light, creamy texture to the finished salad.
Raisins (in the method)
Add sweetness and chewy texture to the fruit mixture.
Pecans (in the method)
Add crunch and a toasty, nutty flavor.

The step that matters

Boil the dressing mixture before adding the egg whites. Heating the egg-yolk mixture thickens it, while adding beaten whites to the hot mixture cooks them gently. Adding the cream only after cooling keeps it from melting or deflating.
