Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish (in the method)
The main protein, which firms and turns opaque as it cooks through.
Butter
Adds fat that carries flavour and helps the fish brown in the pan.
Flour
Forms a light coating that browns and helps the outside crisp.

The step that matters

Fry the fish slowly until done through. Thick pieces need time for heat to reach the centre, so a fast fry can brown the outside while the inside stays undercooked. Frying slowly and long enough lets the fish cook evenly through.

Swap the clove

How well each one fits the dish's main ingredients (vinegar, parsley, butter, flour, pepper):

  1. Tarragonfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against vinegar, parsley, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
