Why it works: Cream and pepper are a kitchen classic. They rank in the top 23% of all ingredient pairs, and cooks put them together in 21,449 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓
Stewed Mushrooms
Ingredients
Directions
Prepare and cook
Peel the mushrooms, wash them in water, and cut off the bottom of the stalk.
Put the mushrooms in a porcelain-lined kettle; to every pint of mushrooms, add 1 tablespoonful of butter.
Divide the butter into 2 balls and roll them in flour.
Let the mushrooms cook in their own liquor, with butter and flour, for 15 minutes.
Finish and serve
Add salt and pepper and serve.
Alternatively, add 2 tablespoonfuls of cream to the mixture; then take from the fire and add beaten yolk of 1 0.%,% and 1 tablespoonful of sherry.
Serve immediately.

Shared aroma: acetic acid (sour, vinegar).
Cream and pepper barely smell alike, yet cooks put them together in 21,449 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mushrooms (in the method)
- Release their own liquor, which cooks down to form the stew's moist base.
- Butter (in the method)
- Adds richness and fat, carrying flavour through the mushrooms as they cook.
- Flour (in the method)
- Thickens the cooking liquor so the stew becomes fuller and less watery.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
