Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the boiling water into a smooth, sliceable pudding as it gelatinises.
Eggs
Set with the heat to give the pudding body and a tender, custardy structure.
Lemons
Supply the rind and juice that give the pudding its bright, sharp flavour.
Sugar
Sweetens the tart lemon and balances its acidity.

The step that matters

Boil until thickened, stirring constantly. Cornstarch only thickens fully when it reaches a boil, and it can scorch or form lumps on the bottom of the pan if not stirred constantly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
