Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dough and add structure and richness to the cookies.
Lard
Adds fat that gives the cookies a tender, short texture.
Molasses
Adds moisture, sweetness and the dark colour and flavour typical of ginger cookies.
Flour
Forms the structure that holds the cookies together as they bake.
Soda
Reacts with the molasses acidity to lift the dough and help it spread and brown.

The step that matters

Bake in a quick oven. A hot oven sets the outside of the cookies quickly, so they keep shape and stay soft inside rather than spreading thin and drying out.
