Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce and, once heated, carries the onion flavour.
Flour
Thickens the milk as it heats, giving the sauce body.
White onions
Provide the main flavour and bulk of the sauce once minced into it.

The step that matters

Stirring in the moistened flour. Flour added directly to hot liquid can clump. Mixing it first into a smooth paste with milk, then stirring it in, helps it disperse evenly so the sauce thickens smoothly.

Swap the onion

How well each one fits the dish's main ingredients (milk, flour, pepper):

  1. Capsicumfits better
  2. Arrowrootfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against milk, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
