What each ingredient does

Herrings
Provide the main fish flavour and the bulk of the salad.
Potatoes (in the method)
Add starchy body that soaks up the dressing and holds the salad together.
Hard-boiled eggs
Add richness and a firm, crumbly texture to the chopped mixture.
Sour cream
Adds fat and creaminess that smooths the sharp vinegar sauce.
Vinegar
Adds acidity that sharpens the flavour and balances the fish and fat.

The step that matters

Let the salad stand overnight in an earthen dish.. Resting lets the acidic sauce penetrate the chopped potatoes, beets, and herring so the flavours blend evenly. Serving too soon leaves the components tasting separate and sharp.

Fit is the average pairing score against cream, sauce, egg, vinegar, pepper, mustard. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
