Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients
Directions
Prepare the meat
Take a calf's liver or an equal quantity of cold veal or chicken, hash it rather coarsely.
Season and flour it thickly.
Fry and brown it in butter.
If liver is used, it must be first browned as in the first recipe.
Make the sauce
Add 1 teaspoon French mustard, a little cayenne, 2 hardboiled eggs chopped fine, a lump of butter the size of an egg, and 1 cup water.
Let it boil for a few minutes.
Or, rub the butter and flour together in a hot saucepan.
Add a pint of milk and bring to a boil.
Add the meat, salt, and pepper.
Stir until thoroughly heated, then remove from heat.
Stir in the beaten yolk of 1 egg, 2 tablespoons sherry, and 1 tablespoon chopped parsley.
Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calf's liver or veal (in the method)
- Provides the meaty base that gives the dish its body and savory flavor.
- Hardboiled eggs
- Chopped finely, they add richness and body to the sauce.
- Egg yolk
- Beaten into the hot sauce, it enriches and thickens it for a smooth, creamy texture.
- Butter
- Adds richness and flavor, and with flour forms the base that thickens the sauce.
- Sherry
- Adds a sweet, aromatic acidity that brightens the rich sauce.
The step that matters
Stir in the beaten egg yolk after removing from heat. Egg yolk thickens by gentle heat and can curdle or scramble if it boils, so it should be added off the heat to keep the sauce smooth.
Swap the mustard
How well each one fits the dish's main ingredients (sherry, parsley, egg, butter, pepper):
- Capsicumfits better
- Shallotfits better
- Carrotfits better
- Mustardthe original
Fit is the average pairing score against sherry, parsley, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
