Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the liquid as it heats, giving the filling its body.
Butter
Adds richness and a smooth, rounded mouthfeel to the filling.
Sugar
Sweetens the filling and balances the lemon's tartness.
Lemon
Provides acidity and bright aroma from the rind and juice.
Egg
Enriches the filling and helps it set as its proteins warm and thicken.

The step that matters

Pouring in the beaten egg. Egg proteins set when heated, so the egg should be added while the filling is hot and stirred or beaten vigorously. This spreads it evenly and keeps it from clumping or curdling into lumps.
