Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Finnan-haddie
Provides the main flavour and flaky body of the croquettes.
Butter
Fat that softens the onion and adds richness to the filling.
Milk
Moistens the filling and helps bind it into a smooth base.
Flour (in the method)
Thickens the milk mixture so the filling holds its shape.

The step that matters

Cool the filling before shaping. A warm, loose filling is soft and sticky, so croquettes may slump or split. Cooling lets the starch set so the shapes hold during frying.

Swap the onion

How well each one fits the dish's main ingredients (butter, milk, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against butter, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
