What each ingredient does

Gelatin
Sets the coffee liquid into a firm, wobbly jelly as it cools.
Coffee
Provides the main liquid and the strong coffee flavour of the jelly.

The step that matters

Fully dissolve the gelatin in the hot coffee. Gelatin sets by forming a network of proteins as it cools. If the gelatin is not fully dissolved before it is added to the coffee, undissolved granules stay in the jelly, leaving gritty spots and weakening the set.
