Egg and pepper barely smell alike, yet cooks put them together in 50,580 recipes: they work on texture and structure more than aroma.

What each ingredient does

Eggs
Bind the mixture and set it into a firm, custard-like texture when baked.
Cracker dust
Adds body and absorbs moisture so the mixture holds its shape.

The step that matters

Baking in a water bath. The pan of water surrounds the molds and moderates the heat, so the egg mixture sets gently. Without it, the eggs can overcook, turning rubbery and grainy.
