What each ingredient does

Cucumbers
Form the main body of the salad once cooked, puréed and set.
Gelatin (in the method)
Sets the puréed cucumber so it holds its shape when unmoulded.
Vinegar
Adds sharp acidity that brightens the mild cucumber flavour.
Mayonnaise (in the method)
Adds richness and fat that softens the sharp, cool flavours on the plate.

The step that matters

Dissolving the gelatin. Gelatin must be fully dissolved into the warm mixture to set evenly. Undissolved granules leave a grainy texture and weak spots, and prolonged boiling can reduce its setting strength.

Swap the celery

How well each one fits the dish's main ingredients (vinegar, cucumber):

  1. Tarragonfits better
  2. Dillfits better
  3. Peppermintfits better
  4. Celerythe original

Fit is the average pairing score against vinegar, cucumber. Candidates are from the same food group and used in at least 100 recipes.
