What each ingredient does

Potatoes (in the method)
Form the bulk of the salad and soak up the dressing while they are still warm.
Mayonnaise (in the method)
Adds creaminess, richness and moisture that binds the salad together.
Vinegar (in the method)
Adds sharp acidity that brightens the flavor and cuts the richness of the fat.
Olive oil (in the method)
Adds fat and a smooth mouthfeel that carries the seasoning.
Green onions
Add a sharp, aromatic bite.
Parsley
Adds fresh, herbal aroma and color.

The step that matters

Dressing the warm potatoes with vinegar. Potatoes that are still hot absorb vinegar and oil readily, so the flavor penetrates the slices. If they cool first, the dressing mostly coats the surface and the salad tastes flat.

Swap the onion

How well each one fits the dish's main ingredients (parsley, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
