Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air that gives the pudding lift, while yolks add richness and help it set.
Sugar
Adds sweetness and helps sweeten and soften the beaten yolks.
Lemon
Juice adds acidity and the grated rind adds a bright citrus aroma.
Potatoes (in the method)
Boiled potatoes add body and moisture, giving the pudding a soft, dense texture.
Nuts (in the method)
Pounded nuts add texture and a rich, toasty flavour.

The step that matters

Fold in the beaten egg whites. Whites hold air that lifts the pudding. Folding gently keeps that air in, while stirring or overmixing deflates the whites and leaves a dense result.

Swap the lemon
