Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten whites trap air and give the cake lift and an airy structure.
Sugar
Sweetens the batter and helps the beaten eggs hold their structure.
Baking powder
Releases gas during baking so the cake rises.
Soda crackers
Crushed crackers add body to the batter and help set the crumb.
Chocolate
Adds richness, fat, and deep flavor to the cake.
Lemon
Its rind and juice add bright aroma and a touch of acidity.

The step that matters

Add the stiffly-beaten whites. Whites hold the air that gives the cake its lift. Fold them in gently, rather than stirring, so the batter keeps as much air as possible before it goes into the oven.
