Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
The white sets around the yolk in the hot water, holding each egg together as it poaches.
Butter
Adds richness and a little fat to each egg once it is served.

The step that matters

Cook until the white is firm. Eggs must be very fresh to poach nicely. Fresh eggs have a thicker white that holds its shape around the yolk, while older eggs spread out in the water. Stopping once the white is firm keeps the yolk runny and the egg intact.
