Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake its light, airy structure.
Sugar
Sweetens the cake and helps stabilize the beaten egg white foam.
Flour
Provides the structure that holds the cake's airy crumb once baked.
Cream of tartar
Acidifies the egg whites, helping the foam hold its volume and stay stable.

The step that matters

Beating the egg whites until very stiff. Whites must be beaten enough to hold air, since that foam is the cake's only lift. Underbeaten whites give a dense cake, and overbeaten whites turn dry and grainy and collapse in the oven.

Swap the lemon

How well each one fits the dish's main ingredients (cream, egg, flour, sugar):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against cream, egg, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
