Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potato
Forms the soft, bulky body of the puff.
Eggs
Whipped whites trap air for lift, and yolks add richness and set structure.
Melted butter
Adds fat for richness and a tender, moist crumb.
Sweet milk
Adds moisture so the mixture spreads loosely and stays soft.

The step that matters

Stir in the beaten egg whites gently. Beaten whites hold air bubbles that expand in the oven and make the puff rise. Overmixing or deflating them against the batter loses that air, leaving a dense result.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, egg, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against butter, milk, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
