Potato Souffle

Ingredients

Directions

Prepare

  1. Take the potatoes from the oven and cut them lengthwise with a sharp knife.

  2. Scoop out the potato flesh with a spoon and place it in a hot bowl.

  3. Mash lightly and finely.

Fill and brown

  1. Add the seasoning, butter, and milk, and then half the whites of the eggs.

  2. Fill the skins with the mixture, cover with the remaining egg white, and brown in the oven. Great care must be taken not to burn the skins.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy base that becomes light and fluffy when mashed.
Eggs
Whites are whipped and folded in to lighten the mixture and help it puff and set.
Butter
Adds richness and flavour to the mashed potato filling.
Milk
Adds moisture and makes the mashed potato filling smooth and soft.

The step that matters

Browning the skins. The filling needs to brown on top while the potato skins stay intact and do not scorch. High heat or long exposure can burn the skins before the top colours, so watch the oven closely.

Swap the potato

How well each one fits the dish's main ingredients (cream, milk, butter, egg, sugar, flour, pepper):
