Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells when soaked and boiled, thickening the milk into a creamy texture.
Eggs
Thicken the cream as they set with heat and add richness.
Milk
Forms the liquid base that the tapioca and eggs thicken.
Corn starch
Adds extra thickening so the cream holds its body.
Sugar
Sweetens the cream and balances the flavor.

The step that matters

Bringing the milk to a boil before adding the eggs. Eggs thicken as they heat, but if they are added too hot or unevenly they can scramble. Stirring the soaked tapioca in first and adding the beaten eggs carefully keeps the cream smooth.
