Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lard
Gives the crust its tender, flaky texture by coating flour and keeping layers short.
Sugar
Sweetens the filling and helps balance the tartness of the lemons.
Flour
Thickens the lemon filling so it holds its shape when cooked.
Egg
Adds richness and helps bind the crust mixture together.

The step that matters

Boil the filling until thickened. Flour only thickens when its starch is heated enough to swell, so the filling must boil fully or it will stay runny in the tarts.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, flour, egg):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against sugar, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
