Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify with the oil or butter to give the spread a smooth, creamy body.
Olive oil
Adds fat that makes the paste smooth and rich in texture.
Ham (in the method)
Forms the main body of the spread, supplying its meaty flavour and bulk.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the fat.

The step that matters

Mix thoroughly with ham until it forms a paste. The vinegar must be worked in fully so the mixture binds into an even paste rather than separating or staying crumbly. Thorough mixing spreads the fat and acid evenly through the ham.

Swap the mustard

How well each one fits the dish's main ingredients (vinegar, egg, olive, pepper):

  1. Capsicumfits better

  3. Tomatofits about as well

Fit is the average pairing score against vinegar, egg, olive, pepper. Candidates are from the same food group and used in at least 100 recipes.
