English Pot Pie of Beef

Ingredients

Directions

Prepare the meat and vegetables

  1. Take nearly two pounds of round steak, cut into finger lengths, flour lightly.

  2. Put a three‑quart iron sauce pan on the stove; when hot, drop in fat of steak, then the meat, let it fry very quickly.

  3. Peel medium‑sized carrot, onion, and turnip; cut into small, regular sized pieces; drop them in sauce pan, stir quickly.

  4. Pour over two cupfuls of boiling water, season with teaspoonful of salt, one‑fourth teaspoonful of pepper; cover tightly.

  5. When it comes to the boil, set back on the stove and let simmer nearly two hours.

Make the crust and finish

  1. Take a teaspoonful of fine chopped suet, two scant cupfuls of flour, a level teaspoonful of salt; mix lightly in a bowl.

  2. Make a hole in the center and pour in half a cupful of cold water; mix with a knife, adding a few drops of water to bind the crumbs.

  3. Roll out quickly, an inch thick, and a little larger than lid of sauce pan.

  4. Taste your gravy to see if seasoned enough.

  5. Lay the dough on top of meat and vegetables; place on the hottest part of stove a minute, then let simmer one hour.

  6. When done cut the crust like pie, and lay around the meat. Do not let it stop simmering or the crust will be heavy.

What each ingredient does

Round steak
Provides the main meat, which browns when fried quickly and becomes tender during long simmering.
Flour
Lightly coats the meat to brown it and thickens the gravy; also forms the dough structure.
Suet (in the method)
Adds richness and fat to the dough, keeping the crust tender and flaky.
Boiling water
Forms the liquid base of the gravy that the meat and vegetables simmer in.

The step that matters

Keep the pot simmering under the crust. If the simmer stops, the dough steams unevenly and turns heavy and dense instead of light. Steady gentle heat keeps the dumpling crust cooked through.
