Potatoes Baked in Milk

Ingredients

Directions

  1. Wash, peel and slice into cold water, and let them remain for half an hour ; put into pudding dish ; season with salt and pepper ; add milk enough to come nearly to the top of potatoes; put into oven and bake one hour ; take out and scatter bits of butter over the top and pour in half a cupful of cream ; return to oven for ten minutes. Serve in the dish they are baked in.

  2. POTATOES BOILED. To boil either pared or unpared potatoes, put them when prepared into slightly salted boiling water, and keep them boiling until tender enough to pierce easily with a fork, then drain ; sprinkle with salt; cover with a folded towel and set back on the range to dry off, and keep hot. If they have been boiled without paring, the skins can be removed l)efore sending them to the table.
