Lemon Cheesecakes

Ingredients

Directions

  1. Boil the rinds of two large lemons till tender, then pound them fine in a mortar, with a quarter of a pound of sugar, the yolks of six eggs, and a quarter of a pound of butter, with a little curd beaten fine ; pound all together till well mixed, line your small pans with puff paste, fill them half fuD, and bake them. Orange cheesecakes are made the same manner with Seville oranges, but the peels must be boiled in three or four waters to take off the bitterness, and they will require a little more sugar.
