Ingredients

Directions

  1. Take all the meat out of a ready-dressed lobster, pound it fine in a mortar, moistening it with a little melted butter, add some mace, pepper and salt to taste ; you must poimd the pea with it, as it improves the appearance ; put into pots as before, and cover with butter as before. Crabs and shrimps can be prepared in the same manner. Anchovy paste is made in the same manner, and also herrings are very good.
