Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish, staying soft and tender under the sauce.
Milk
Liquid that, thickened with flour, becomes the creamy sauce binding the dish.
Flour
Thickens the butter and milk into a smooth white sauce.
Butter
Fat that cooks with the flour and adds richness and flavor to the sauce.

The step that matters

Add the milk slowly to the butter and flour. Adding liquid gradually while stirring lets the flour starch disperse evenly, so the sauce becomes smooth instead of lumpy.

Swap the potato

How well each one fits the dish's main ingredients (milk, flour, butter, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Shallotfits less well

Fit is the average pairing score against milk, flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
