Mashed Potatoes

Ingredients

Directions

  1. Pare and plain boil, mash in the same vessel in which they are cooked, and season with hot milk, butter, and salt to taste ; beat with a fork, and arrange neatly in a hot dish, or glaze over with butter, and brown in the oven. If browned, cut across each way, that the crust may not bind.

By Emily Huntington (1841–1909). Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures. See the original page.
