Apple Cream Filling for Cake

Ingredients

Directions

Make the apple cream

  1. Beat the white of one egg very stiff. Add one cup of granulated sugar and beat well. Quickly grate one raw apple into the egg and sugar, add the juice of one quarter lemon and beat for 20 minutes, until light and foamy.

Make the cake and icing

  1. Cream together one half pound of sugar and one half pound of butter. Beat the eggs into this separately, until five eggs have been used. Add flour and one small teaspoonful of baking powder. Bake in a moderate oven about 55 minutes. One half pound of flour is used in this cake.

  2. Stir to a cream one half cup of butter, one and a half cups of pulverized sugar, one tablespoonful of milk and one teaspoonful of vanilla. It is then ready to use for icing a cake.

  3. Mix the coconut layer cake ingredients like an ordinary cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and beaten eggs trap air and give the cake and cream their lightness.
Butter
Creamed with sugar, it adds richness and a tender texture to the cake and icing.
Sugar
Sweetens the cream and helps the beaten egg foam hold its structure.
Flour
Provides the structure that sets the cake as it bakes.
Baking powder
Releases gas in the batter so the cake rises and becomes light.
Apple
Adds moisture and fruity flavour to the light apple cream.

The step that matters

Beat the egg white very stiff. Beaten egg white holds air in a stable foam, which gives the apple cream its lightness. If the white is under-whipped, the foam collapses and the cream turns out dense and flat.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, flour, milk, vanilla, cream, egg):

  1. Figfits better
  2. Coconutfits better
  3. Raisinfits better

Fit is the average pairing score against sugar, butter, flour, milk, vanilla, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
