Shared aroma: 2-nonenal (fatty, green).
Egg and pepper barely smell alike, yet cooks put them together in 50,580 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Breadcrumbs
- Form the bulk of the layers and absorb moisture from the stewed fruit and eggs.
- Eggs
- Bind the breadcrumbs together and help the pie set as it bakes.
- Apples (in the method)
- Provide moisture, tartness, and soft texture that contrasts with the crumbs.
- Onions (in the method)
- Add savoury flavour and soften into the layered filling as they stew.
The step that matters
Stewing the onions and apples. Cooking them without added water until fully tender drives off excess moisture, so the filling does not make the breadcrumb layers soggy or leave the pie watery.
