Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the soaked breadcrumbs and help the pie set as it bakes.
Allinson breadcrumbs
Absorb the tomato juices and give the pie its body and structure.
Tomatoes (in the method)
Provide the main filling, moisture and tangy flavour.
Onions
Add savoury sweetness and aroma as they soften with the tomatoes.
Butter (in the method)
Adds richness and helps the top brown lightly.

The step that matters

Soak the breadcrumbs with hot milk. Breadcrumbs must be moistened just enough to hold together. Too little liquid leaves dry pockets, while too much makes the pie soggy and loose once the tomatoes release their juices.

Swap the onion

How well each one fits the dish's main ingredients (egg, parsley, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against egg, parsley, pepper. Candidates are from the same food group and used in at least 100 recipes.
